I read a recipe for a chicken brine that claimed that the secret to Popeye’s delicious chicken was that they used a brine that was basically a pickle brine. I saved up some pickle brine in the fridge and have been brining chicken. I have a large pickle jar in the fridge and I simply dump any dill and half sour pickle brine into it. When I’m planning to grill chicken I put the chicken into a leakproof container and pour enough of the brine in to cover the chicken. Depending on the thickness of the chicken I brine for a few hours to overnight.
I have found that chicken tendered take only a couple of hours while a breast can go over night. That said, the brine does break down the chicken and it can fall apart on the grill. I now err on less brining time than more.
I consider this is a quick brine.
How’s it taste? Really really good, especially if you get pickles with a lot of garlic and onion. I have started to save the brine and add in a few cloves of garlic to up the garlic flavor.
